I have been pretty good lately about saving money though. Soooo... may I just back up a few weeks and say that my New Years Resolution is to find 5 ways to save money and share them with you?

#1 Get on a Meal Plan

There are tons of resources online to help plan your weekly and monthly menus (like E-Mealz or OnceAMonthMom) . We have been using OnceAMonthMom.com since this past summer. I can't even begin to tell you how much more effective of a Mother I am when I follow this plan. Not only does it save us money on Groceries (about $300 per month!) but it saves our time (which = priceless). One of my strategies with OAMM is to find a meal plan and print out their grocery list a month ahead of time. I then use a couponing site like SouthernSavers or TheGroceryGame. When my list items go on sale, I pounce.

If you aren't cooking once a month, you are losing time!
Here is what I figured I save every month on time:
5 hours a month on UN-focused grocery shopping.
2 hours a month on last minute dinner grocery shopping.
4 hours a month menu planning, recipe searching, grocery list making.
1 -2 hours every day considering, preparing and cooking breakfast lunch and dinner
= at least 41 hours per month!

Annual Savings $3,600 and 492 hours.

#2 Make Your Own Laundry Detergent

I have started making my own laundry detergent by using these instructions on Yellow Brick Home. I figure it costs me about $12 for 6 months of this stuff. I add one heaping tablespoon to my washing and my clothes come out smelling simple and clean. The Hubbs loves the smells that arise when I mix this stuff, and always asks if I can sprinkle it around the house. If I'm feeling squirrely, and I have a coupon, I add Purex Crystals to the mix. You can request coupons (every 4 months) for Felz Naptha, Borax, and Purex by calling the Henkel/Dial home office at 1-888-468-6673.

#3 DIY Home Repair

Oh.................um..................what was I talking about?

We are well aware that we can learn how to DIY almost anything by opening up our trusty old laptop. Make sure to use this wealth of knowledge for the good of our homes (or maybe just to be able to tell your husband, "Hey -I've got it covered here on the home front, why don't you get back to the office and come home when I need a back rub or to make a baby!")

Be sure to check out Family Handy Man. I have yet to come up with a project that I couldn't look up on this site. If you need some pro-woman and hilarious motivation go see Karen over at The Art of Doing Stuff she will knock your socks off.

If you have a question, go to Just Answer, they saved my tail on a washing machine repair last year. Earlier I got a quote from my local Sears for $120 to come out and look at my machine, and that didn't include labor ($80 per hour), or the part. I went on to Just Answer and they linked me up with an online expert. He diagnosed my problem right away, answered my bajillion skeptical questions, gave me a link to the cheapest place for the part I needed, found a local place that could get it in for me, and walked me through installing it. It cost me $25 for the inquiry, and I only had to pay if I was completely satisfied with my answer, which of course I was! In the end I saved $175 dollars!

#4 Ditch Cable or Satellite

This was an easy one for me. I have had a bad run with poor service and insane rates from the only providers in my area. Monopoly anyone? We have gone to a combo of Hulu Plus (7.99 per month) and Netflix (7.99 per month). We use Xbox Live for streaming, others use their Wii or PS3 . If you don't already have one of these systems, used ones are popping up on Craigslist for cheap.

Also, if I get bored with these offerings, there is no obligation. I can check out some of the other streaming, rental and device options like:

#5 Make the Final Switch to CFLs

I have been holding on to this sweet poem I found over at Magical Childhood for a while. Lately, I haven't been able to peel Camden off of me. He seems to need more from me than usual. I'm often feeling guilty after his bedtime when I start to miss him. Today, in the middle of rehabilitating our poor house from the holidays, I uncovered these words. It's amazing what comes across your path at just the right time.

DIY Photo Christmas Card

(I know it's a card with trees on it, I am saving my family pics for later :)

Earlier this year I won a HUGE Giveaway package from Jacob Dean Photography. My head is still spinning! I decided to be very patient and wait until Fall to have the shots done so I could use them for our Christmas cards. A few weeks ago I started looking around online for some ideas to showcase my new family portraits. I settled on a simple card design that looks very similar to the one above. After checkout, envelopes, shipping and taxes they came out to about $2.05 per card! I want about 100 cards, so that's over $200 bucks for me -um, I'll pass. I looked at the cheaper options and they still priced for over $1.00 per card and they looked, well, cheaper. Of course, because I have nothing else in my life to accomplish, I decided to figure out how to do it myself. Now you too can have your cards printed, for an average of .50 cents per card (including envelopes).

WARNING: This is the longest post ever, but still these are so easy to make. After figuring it out, I can now design a card in under 10 minutes. This will save me tons of trouble in the future!

Sign up for Picasa (FREE) by going to here. Picasa will automatically search for and upload all pictures found on your computer.

Sign up for picnik.com (FREE) by going here. If you don't already know, picnik is an amazingly simple way to edit pictures

Go online and find a Christmas card design that you think you can take on, start simple.

Go into your Start menu/Programs and find Picasa

When in Picasa Click on Create

While under Create tab Click on Picture Collage. (If pictures already appear on your work surface click select all and then remove).

Pull how ever many pictures you want for your card from the left. Click on Get More if you need to search for more.

Once you are pleased with your picture combination, click on the Settings tab

a. Choose 5x7 Large Print

b. You can choose picture pile, mosaics or grid. I choose picture pile so I can create a blank space between pics.

c. Play around with border options

d. If you want a color to your borders choose one here
e. UN-check Draw Shadows

Arrange your photos how you would like them in your lay out.
*TIP I made a space in between two pics so I can add a statement in.
*Extend your pictures a little bit past the 5x7 edge so that they will print cleanly.

Click Create Collage.

Click Edit in Picnik

Now play around with stickers and text and colors
(I used geometric rectangles and a triangle, for for the banner, added a snowflake, then text.)

Save it to your pictures and upload it to your favorite photo developer.

**At SAMS they offer 5x7 prints for as low as .34 cents (.38 for in club pickup)
***You can find envelopes for around 7-15 cents a piece. Look for size A7 envelopes (5 1/4 x 7 1/4). Try Amazon.com, Michaels and Hobby Lobby.

Fight for Your Right to Potty...and FREE Potty Training Printable

Sooo, it's about that time here over at The Family's house to talk about the P word. In fact, there are tons of P words flying around here: potty, pee pee, poop, patience, progress, prizes, pleading, pick up poop, perseverance, praying... you get the point.

I love this post over at Make It and Love It on how potty training almost sent Ashley to therapy. It was pretty brave of her to share her methods and mishaps while training, especially when there is a plethora of opinions flying around out there! I'm so glad she did!

I'm not going to get into all of the details of our proposed potty plan yet. I am still so humbled by this whole Mom thing. I can't even start to think I have any shred of competence in child rearing. I still can't bring myself to talk about how I, I mean 'my friend' let 'her baby' fall on his little head once. Thank goodness for the honest Moms out there and their similar stories that make me feel like I haven't ruined his life...yet.

One thing we are trying out is to follow a progress chart. I made a trip over to The Dollar Tree and picked up 500 little stickers for $1.

Then I grabbed a $1 tote and toy packages full of random things like dinosaurs, dump trucks, cars, balloons, glow sticks, play dough, and so on. We decided not to reward with candy because A. We'd eat it, and B. Our relationship with food and candy has not been the best. Maybe we can help break the vicious cycle? Again flying by the seat of my pants on that one.

We use a little chart and give out 2 stickers for pee and 3 stickers for poop. When he fills up a row with stickers we let him pick a prize out of his cool new prize box.

Trying to top last year's costume is darn near impossible, but I think I have just about decided on one for little man this year. I've been hanging on to this entry here by Oh Happy Day for a while. Could you just die?! -I mean how cute is this?! I think we have to go Lumberjack. Given the position of the stars and the planets and Camden's willingness to wear a hat this month -the time feels right. Should be an easy enough homemade project, I think...
Note to Self: Pick up baby axe.

$5 Monogram Wreath

This year I am so determined to take small steps towards decorating. Even though we move almost annually, I still feel bummed that I have never really nested. The budget is tiiiight and It's been hard to justify any extra spending of home fluff. I'm trying to portray to the Hubbs that decorating is part of my natural domestication process. It's important to me -dang it! This happens to be a touchy subject for me.

I talked about starting with decorating my front porch in this post , and now I'm working on a few different ways to strectch a buck or five. I've been looking for a way to use these leaves I picked up at the Dollar Tree:

Monogram Wreath
Materials:
A piece of cardboard big enough to cut your letter of choice (I had a cardboard box on hand) = FREE
Hot glue gun (already have) = FREE
5 packs of leaves from Dollar Tree (10 count per pack) = $5.00

Trace your letter onto cardboard and cut out

Get an idea of how you want to glue your leaves on and start gluing

.....and done.

When I showed it to Hubbs he giggled a little,

I said "what",

he said "it's a BIG D",

me: "Yes, our last name begins with a D, see it's customized",

He giggled, again, maybe not so much giggled as scoffed perhaps

So for some reason I let what he says get to me and my pretty little wreath lost it's home on the front porch and is now hanging on the back. But when walking up to it -it is so beautiful! Even Mr. D is now loving the contrast. Too late Mr. D. I already spent $15 bucks on the new wreath I'm making for the front porch. Ha! that'll teach you to giggle/scoff at my domestication process......

I think decorating around your front door is the cheapest and easiest way to keep you inspired to tackle the rest of your home. A Cupcake Tasting Party

Whew, so much has gone on in the past few weeks!
One of my best girlfriends came down from Indiana to firm up some of her wedding details (including what cupcakes flavors she will use at her reception). My little adopt-O-sis graduated and is heading off to law school soon. Another of my lovlies recently graduated, went to China to teach, and just got back into town (and I thought I was busy). I spent some great time with everyone and in the process I got to throw a cupcake tasting party, don't you feel sorry me?

We got the wedding party/helpers/graduates together to help make some decisions. I had many willing volunteers.

I called upon my gal Brittany at Kupcake Killer who whipped us up a few batches of the yummiest, most darling cupcakes. She is so creative and easy to work with. We just love her.

I bought everything for the party- linens, tea service, plates, cups, saucers, champaigne glassware, tea cups etc... all for under $30 at local thrift shops. I made sure that nothing matched and the stores really appreciated getting rid of their odd pieces.

Our First Attempt at a Garden

Here is our 1st Garden:

...he tilled the land, she seeded the earth, together they watched the clay give birth....

My goodness look at all of that Geeeorgia Clay! It has been raining for the past few days.

At least I know my little seeds are being well watered.

I made a deal with the hubby last year: If I do well with a garden this year, he will build me some pretty raised beds next year. The thing is, after we spent so much time and energy on this dirt, I'd be hard pressed to leave it. Something about hard earned dirt, I don't know....

I have high hopes and recipes for the upcoming growth. Here is what I planted:

Green Beans

Okra

Corn

3 types of tomatos

Zuchinni

Yellow Squash

Cucumbers

Two types of lettuce

Cabbage

Onions

Broccoli

Carrots

Canteloupe

Watermelon

I still have some sunflowers, and herbs to plant.

I hope all goes well, I patted all of my little seeds and sent them some love, so that should do the trick, right? We will see.

I like to use bath time not only as an opportunity to wash out all of the spaghetti sauce we used for hair gel, but also for learning. Camden is really into his sea creature bath toys, but they get moldy so easily and kinda freak me out. So, off to the dollar store for some ideas.

I found this pack of foam for $1 at The Dollar Tree.

I think it will work perfectly for this craft.

Cut out your creatures.

These little sheets cut very easily.

Get them damp and stick them to the wall.

That's it!

Grasshopper Cupcakes

With all of this green around me, I got a hankerin' for something minty. I love grasshopper pie, but needed a more family friendly version so everyone could enjoy.

You will need (makes 12):

-1 8oz. Block cream cheese (softened)

-1/3 Cup of sweetened condensed milk
-1 Egg
-1/4 tsp of peppermint extract
-1/4 tsp of vanilla extract
-1 Tbsp of flour
- 20 Oreo cookies (or if you like extra minty, try mint stuffed Oreos)
-1/4 Cup mini chocolate chips
-Green food coloring

Preheat oven to 375

With electric mixer, mix cream cheese, milk, egg, extracts, and flour until light and fluffy.

Mix in food coloring to desired color.

Stir chocolate chips into mixture.
Line muffin tin with cupcake wrappers and drop 1 cookie into each one.
Spoon mixture over cookies.

Smoosh remaining cookies in a baggie, then sprinkle over each cupcake.
Bake for 20-22 minutes (do not overcook).
Let cool. Place in fridge for 4 hours or overnight.

Garnish with whipped cream, mint or more cookies!

Take a bite and give your baby a minty kiss!

At first, the thought gulping down a thick green drink didn't thrill me. By the second sip I was hooked! You'll be proud to serve this nutrient packed drink to your family too.

What better day to have your kids try this than on St. Patty's Day?

You will need: (makes 3-4)
4 Cups Fresh Spinach (loosely packed)
1 1/2 Cups Orange Juice
1 Ripe Banana
2 Cups Frozen Fruit (light colored or your drink will look like mud)

Blend until completely smooth

It's been awfully rainy here in the Upstate. Little Man has waaay too much pent up energy and Mommy is wondering how much longer she can be his personal trampoline. In honor of our anniversary I could get overly cheesy on you, but instead I'll share these absolutely gorgeous and emotional photos (featured over at The Pioneer Woman - AKA my Bloggy hero).

Baked Oatmeal

This is a wonderful Bed and Breakfast type of recipe. I was browsing around one of my 'go to' sites, Our Best Bites and came across it. This would be perfect to warm up the kids after a chilly morning of playing in the snow. I might try this for when we have out of town guests and need something easy enough to make after a late night of too much fun. It turns out like very hearty homemade oatmeal, but with that extra texture from baking.

You will need (makes 8 servings)

3 cups oats (not quick-cooking)

3/4 cup brown sugar

1 tsp salt

2 tsp cinnamon

2 tsp baking powder

3/4 cup raisins, dried cranberries, dried cherries, or other dried fruit

1 cup milk

1/2 cup butter, melted

2 tsp vanilla

2 eggs

-Preheat oven to 350

-In a large bowl, combine dry ingredients

-In a small bowl, whisk together wet ingredients
-Combine wet and dry ingredients, mix well
-Pour mixture into a greased casserole, deep pie plate, or an 8x8 dish
-Bake for 40 minutes or until the top is golden brown
-Serve immediately with a splash warm milk (if milk is cold it will cool down everything too much)

This smells so amazing coming out of the oven. I had a hard time snapping shots due to my toddler pulling on my shirt while using some choice toddler words towards me. I then promptly scooped out some oatmeal, scooped up the toddler and we snuggled on the couch with a bowlful of this belly filling stuff.

Recently I made a fort for my little guy. It was quite a pitiful little fort, made of couch cushions and my husband's old college comforter. Not nearly as enchanting as I envisioned, but to my 18 month old it was the perfect little romping space.

Give With Heart

The Hubbs and I have both been in the food industry for a while. We have started to notice all of the Crayons being tossed out at our restaurants. Did you know that in most states restaurants are not allowed to reuse their Crayons due to food safety practices? While I appreciate them avoiding the spread of germs, it did make me wonder - How many Crayons are wasted that are perfectly fine for the general public?

Yep, that's a laundry basket full. This is only 3 months worth from my husband's restaurant!

We found a local Women's and Children's Shelter to happily take our batch. This is such an easy and free way to pass along something great - the tools for imagination!

So, if you know of someone in the restaurant business, or just want an easy way to get involved in charity, set them up with a Crayon bucket, bag or basket. Have them toss the Crayons in there instead of the trash and pick them up as needed.

I hope you have sweet plans over this Valentine's weekend. Here are some naturally occurring hearts to enjoy.

Heart Filled Cupcakes

Heart Filled Cupcakes makes 24

1 Box white cake mix
(ingredients to make cake mix as directed on box)
1 Vanilla pudding pack

Red food color or gel

Mini heart cookie cutter

Candy or flag topper
Toothpicks

My Favorite Strawberry Frosting here

Preheat oven according to directions.

Make cake mix according to directions.

Scoop a heaping cup of mix into a separate smaller bowl.
Add food coloring to smaller bowl, mix to desired color.

Grease an 8x8 pan and line with parchment paper (allow the paper to hang over the edges).

Lightly grease paper again.
Pour red batter into pan.
Bake according to directions, but keep an eye on it as it may need to come out early.
Let cool completely (I put in in fridge to hurry along the process).
Lift out cake and cut 24 hearts.

Mix pudding cup into remaining batter.
Fill cupcake tins halfway.
Place heart cut outs gently into batter (Important: Make sure they are all centered and facing the same way).
Fill cupcakes with remaining batter.
Bake according to box directions (may need more time due to pudding).
Insert a toothpick and make sure it comes out clean.

When cupcakes are cooled make sure you keep them foward facing (I poked toothpicks into the sides to indicate what direction the hearts were in).
Frost.
Use candy or flags to indicate where the heart is.
Eat towards the flag or candy to see the shape.

My Favorite Strawberry Frosting

This is my absolute favorite strawberry frosting. It's like a strawberry cheesecake milkshake on top of a cake kind of good! Mmmm... berry blissdom!

Strawberry Cream Cheese Frosting

1 heaping cup fresh or frozen whole strawberries (thawed)

2 8oz packages cream cheese (softened)

2 cups confectioner's sugar

2 tsp vanilla extract

1 8oz tub Cool Whip

Heart Filled Cupcake Recipe here

1. Puree strawberries in blender or food processor.

2. Mix strawberry puree and all other ingredients with mixer for 3 minutes.
3. Refrigerate.

Tip: This frosting can be runny so make sure you blend well, cool it down, and only frost when cakes are completely cool.

2 vases ($3 and $5) similar in height and shape

5 of the smaller bags of conversation hearts

1 bouquet (I started with tulips but they wouldn't form correctly in this type of vase)

The First Haircut

Part I: What's the Big Deal?

I didn't understand what all of the fuss was about over a haircut. The Hubbs wouldn't even talk about it when I mentioned it. Friends warned me to bring a camera with that sentimental warning in their eyes. Am I missing something? I mean, isn't it my responsibility to keep his little noggin under control? If only my parents had protected me from bad hair I wouldn't be hiding so many bad pictures. I mean blackmail bad.

So, with much convincing we headed off to see one of my favorite people in the whole wide world, Susan, who owns Tiger Cuts. (a word of caution: You will be exposed to large doses of orange and purple. We are in Tiger country after all.)

Here is the before shot. See what I mean? What family members referred to so fondly as 'baby curls' just looked like a mullet to me. A little too much business up front and party in the back for my taste.

For The Birds

I noticed some bright red cardinals digging around in the back yard last week and thought it would be nice to get some seed out there. I remembered a little project out of my Family Fun magazine and looked up these bird biscuits. I hope these Valentine's warm their little birdie hearts.

I made 2 large and 2 small biscuits. Adjust the measurements for whatever cutters you have on hand

You will need:

Bird seed (3 cups)

Metal cookie cutters

Flour (4 Tbls)

Water (1/2 cup)

Cooking Spray

Straw

Ribbon or twine

1. Preheat oven to 170

2. In medium bowl combine flour, water, and bird seed

3. Position a straw to make a hole for the ribbon

4. Press birdseed into cookie cutters

5. Remove straw

6. Dry out in oven for 1 to 1 1/2 hours

Lovely Words Wall Art

As promised, here are the instructions for my Heart Wall Art.

Here is a peek at yesterday's Heart of the City Wall Art

You will need:

Wall frame with matting for an 8x5 picture

White and red card stock paper

Old book (or map)

Heart hole puncher

Grid paper

Pencil

Double sided and regular tapes

Foam adhesive mini circles

Pin or needle

1. Line up your grid paper with the mat and lightly trace.

2. Configure blocks using the tracing as a guideline (it doesn't have to match exactly, you can adjust the paper in the matting later).

3. Make dots in centers of squares.

4. Tape the grid with double sided tape to the back of your white card stock paper.

5. Looking at the grid paper side up, poke you needle in the center dot to create an indention into the other side.

6. Stick your adhesive circles over the indentions.

7. Punch out your hearts.

8. Carefully stick your hearts onto the adhesive circles.

Line the paper up into the mat and use regular tape to keep it in line.

Now hang up your lovely project!

Heart of the City Wall Art

This is such a simple and cheap way to add some Valentine's wall art to your home! You can make it meaningful by cutting out all the places you have lived and visited.

I cut out some of my fave cities (like Chicago and where my family members were born)

Scratch Off Valentines

I got this super cute idea from over at littlelovely. What a sweet Blog!

You Will Need:

-Contact Paper (Just ask the nice staff at Hobby Lobby where to find it. It's only about $4 and has tons of uses!)

-Red Card Stock and Envelopes (I got lucky and found a pre-cut set)

-Metallic Gold Paint (the cheap acrylic craft kind)

-Gold Gel Pen

-Paint Brush

-Dish Detergent

-Scissors

1. Cut a heart out of your paper.

2. Write your sentiment.

3. Cut the contact paper to size.

4. Attach contact paper to face of card and trim around heart.

5. Mix 2 parts gold paint with 1 part dish liquid.

6. Paint over your phrase, let dry and add a second coat. Let project dry completely.

Send Valentine off with a coin.

Heart Garlands

Valentine's and paper crafts, what a perfect couple.
Check out these easy paper heart garlands.

You Will Need:
-Construction paper in colors of choice
-Pencil
-Scissors or paper cutter
-Regular Scotch tape
-Double sided tape
-Neutral colored thread
-Needle

-Cut several strips of paper into even widths.

-Decide what kind of shape you would like. I made big hearts, little hearts CurlyQ's, and S's. (If it's a larger shape tape two strips of paper together first with regular tape).

-Curl the paper around a pencil to form your shapes

-Thread the needle through the bottom of your heart.

-Using double tape secure the thread and shape together.

Some of the shapes will need to be secured by wrapping some double sided tape on the thread underneath them.
-Just hang and that's it.

Crepe Valentines

Here is a simple Valentines Day project you can do with the kids (the more patient, crafty kind of course).

You Will Need:
Card stock paper in color/s of choice
Crepe streamer paper in color/s of choice
Pencil with flat eraser
Scissors
Glue

-Cut a heart out of card stock. (Note: The smaller the Valentine the less time consuming).
-If you want to give as a Valentine make sure to write what you want to say on the bottom.
-Cut squares out of the streamers.
-Apply Some Glue to the heart. (Working from the outside in makes a lovelier heart.)

-Form the Square around the eraser of your pencil to create little buds.

-Press the buds into glue. Make sure to keep them pretty close together.
-Fill in all of the little spaces.

You can give these to your most special Valentines, turn them into wall art, or hang them with pretty ribbon in your windows

Camden's 1st Birthday

I can't believe it, our little guy is one! As you know, I've been dying to have a rainbow themed party,

so I decided that this is the year to do it. We will have plenty of time for manly cars/trains/monsters later. I wanted to keep it cute and fun. Some special family and freinds came into town and made this the most amazing day!

Rainbow Cake

RAINBOW CAKE!

For Camden's 1st Birthday I decided to go with a rainbow birthday cake. It seemed challenging enough, so with a little extra time, love, and a mash up of many recipes, this is what I came up with:

You will need:

-3 boxes of white cake mix

-ingredients to make the cakes as directed

-3 snack cups of vanilla pudding

-Wilton icing coloring in red, orange, yellow, green, blue, and purple

Frosting:
3 -8oz Blocks Cream Cheese (brought to room temperature)
36oz Cool Whip
3 cups Confectioner's Sugar
3 tsps Vanilla Extract

You can measure out the batter into 6 bowls by eye, or if your'e a nerd like me, you can add up the combined weight of the bowls and batter on a food scale, divide by 6 and redistribute accordingly.

Use small amounts of gel per bowl (they are very concentrated).

I used toothpicks to add.

Transfer batter to pans. I baked 2 pans at a time at 325 for about 35-40 minutes. When using pudding in any mix you really will have to go with inserting a toothpick and looking for it to come out clean.

Sooooo pretty

You need to make sure to level the layers or your cake will tilt. I used a cheap $4.00 leveler from Walmart. Make sure to work with wax paper.

I think it is best to freeze the layers ahead of time to make them easier to work with. Use Wax Paper then wrap in saran wrap.

Take out of freezer and frost a few hours ahead of party.

To Make Frosting: Beat Cream Cheese, Sugar and Vanilla until well combined. Fold in Cool Whip very well (make sure you can taste the cream cheese throughout).

Oh Myyyy!!!!!!

Use your imagination for toppings, I used Trix cereal.

This was a very big hit at the party. The adults loved it and the baby pretty much just ate the Trix.

The First Night Away

This past weekend John and I decided to visit his Dad over in Myrtle beach. John also had the spotaneous idea to check out a bed and breakfast over in Charleston. Sounds like a great weekend to me. "What about the baby?" I said, "We can't take an infant to a B&B, people go there to relax." John- "Sure we can, he's a goood baby." -that John, he's so cute (I'm mimicking a cute little pat on his head). I can just imagine the other couples glaring at us as we try to wrestle our little romper into some state of control. So we asked Grandy to watch him for a night. He was more than willing.

We got down to Charleston and prepared for a good old fashioned night out on the town. After a few hours, the Holy Crap I Forgot My Baby Somewhere! feeling wore down, and I was able to actuallly enjoy myself. You may not remember this, but I can be pretty laid back and fun to party with sometimes. We walked all over downtown taking in the different happy hour specials at various locations. John and I were almost giddy, holding hands wherever we went. I didn't know how nice Charleston could be. The times I have gone before it was in the middle of the hot humid summer heat -the zaps your will to live kind of heat. This time it was perfect. The sunset lit the town up like it was on stage.

Needless to say it was a great weekend. We got some time in with the family and Grandy made it through the babysitting adventure unharmed. I'll have to tell you about the diaper changing fiasco in another post -did you know they used to use saftey pins to hold diapers together? Strraange! As for how much he spoiled the baby and what kind of goodies the kiddo had- I don't even want to know.

Well, we finally made it to South Carolina and man is it beautiful here! As we drove down from Chicago it was nice to realize that there is still so much land left untouched and au naturale. I can't wait to get into some hiking or over to the lakes. It is definitely bittersweet, I will always miss Chicago dearly. Even though we were only there for a year, we made so many strong and meaningful connections. I know I will never live in a cooler or more creative city.
We had an amazing send off party and so many of our friends got to come. It meant so much to us. And yes, in our time there we did make it to Oprah and a Cubs game - and I'm so glad we did! Here are some of my favorite pics......

Healthy Baby Recipe: Buttermilk Nut Scones

These came out so moist and fluffy! Perfect texture for Baby! I tried them out also (I used just a little formula, don't freak out). They are pretty basic, but were still tasty. I think I will tweak (a.k.a. junk them up) a little for the grown-ups.

Makes 30 Scones.

Buttermilk Nut Scones

(8 months +)

adapted from Amanda Grant's 'Baby & Toddler Healthy Eating Plan'

You will need:

4 cups self-rising flour

1/4 tsp ground cinnamon

1/4 cup unsalted butter

2 Tbls crushed nuts

1 1/4 cup buttermilk

6 Tbls formula or breast milk

-Preheat oven to 350F. Sift flour & cinnamon into a large bowl. Cut butter in thoroughly, stir in nuts and buttermilk.

-Add enough formula/breast milk to make a soft, sticky dough.

-Drop tablespoonfuls of dough onto a sprayed baking sheet.

-Bake for about 12-14 minutes -scones will stay pretty pale so check bottoms.

Serve warm and freeze the rest.

Healty Baby Recipe: Pear & Cinnamon Mini Muffins

Pear & Cinnamon Mini Muffins

(8 month +)

These are great to freeze ahead and pull them out for breakfast

Makes 24 Mini Muffins

You will need:
1 3/4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
6 Tbls sugar
1/4 tsp cinnamon
1 large egg
4 oz. breast or formula milk
3 Tbls unsalted butter, melted
1 medium pear, peeled and finely chopped (fills about 1 cup)

-Preheat oven to 375. Spray muffin pan with cooking spray
-In large bowl, sift together flour, baking powder, and baking soda
-Add the remaining ingredients. Mix well (makes a sticky batter)
-Spoon batter into pan. Bake for about 12 minutes.

Easter and the Park

Ahh Easter Sunday, can't you just feel the renewing possibilities? I feel like I missed the boat a little this year. We didn't try out egg dying or hiding (the baby would probably just try to cram them in his mouth). No chocolate, candies or cakes (we adults would probably just try to cram them in our mouths). We are in the middle of packing, so decorating was not an option. All of this just motivates me to knock it out of the park next year.

Even though it was simple and small, we had a beautiful Easter. The weather was perfect -warm and breezy. It seems like every blade of grass was waiting for this morning to burst into green. After Easter Service the three of us had a fantastic brunch. John took us out to 'The Grand' in Arlington Heights. We took our time enjoying the great food while Camden stayed busy catching everyone's eye.

Afterwards we went to the park to enjoy some sunshine and to take pictures

     Okay I have to tell ya, I have an affinity for all things Greek, be it the food, the soaps, or the all around richness of culture. I was blessed several years ago to live in Tarpon Springs Florida for a summer. This is where my flame for authentic Greek good was fanned. Tarpon Springs holds the largest and oldest greek colony in America. If you are ever near Tampa swing by and visit the sponge docks, it makes for a sweet afternoon. While there you MUST vist the Seahorse, a shop with the most beautiful hand crafted soaps I've ever seen (or smelled for that matter). Their online shop is http://www.getaguru.com/ -trust me, I value them so much I only use my precious soaps on special occasions.

     Last year downtown Chicago was having a Greekfest, The Hubbs, Grandy, one of our Besties - Brian, and our brand new 1 month old were happy to attend. After we had our fill of souvlaki and feta, we found a vendor selling these super bright little shirts with a rooster proclaiming "KiKiDiKi" (The Greek version of Cock-a-doodle-do). I had to buy one! The smallest size they had was 12 months.
     Today, with it being springtime, I impatiently brought it out to try on our 8 month old and guess what? Big Beefy Baby could barely fit his Big Beefy head through it!

Man, these pythons are sick!

Healthy Baby Recipe: Mushroom Pasta Sauce

I'm trying out a variety of flavors and textures on the Babe. I really don't want him to end up to be a picky eater, like myself (oh the shame). What better way to start off than with my arch nemesis -mushrooms! Dum, Dum, Dummm.......

Mushroom Pasta Sauce

(8 months +)

adapted from Amanda Grant's 'Baby & Toddler Healthy Eating Plan'

You will need:

1 Tbls Olive Oil
3 Scallions (finely chopped)
10 oz. Mushrooms (sliced)
1 Tbls Parsley (finely chopped)
Fresh Ground Pepper
6 Tbls No Salt Vegetable Stock
3 Tbls Cream Cheese
Pasta or Rice (cooked)

Heat the Oil in Large Skillet. Add Scallions and Saute' Until Translucent (about 5 min.)

Add Mushrooms and Fry Until Golden Brown and Begining to Loose Their Liquid. Add Parsley & Pepper and Stir.

Stir in Stock and cook over gentle heat until soft (about 5 min)

Stir in Cream Cheese

Mmmm... smells great!

Transfer to Food processer (blender, hand mixer) and Blend into Desired Consistency (I left mine with a little texture). Freeze in Ice Cube tray. Makes About 12 Cubes.

Serve Over Pasta or Rice

(Um kinda looks like cat food, but I'm sure it's good right?)

Picnic in Lincoln Park

I've been looking foward to this day all week! The Hubbs has the day off and it's supposed to get up into the 70's. Camden and I have been cooped up in this house far too long! Let's break out of here boys, perfect day for a Picnic! There is no better place than Lincoln Park to spend such a pretty day. Whether it's to enjoy all of the beautiful parks, take a walk by the lake, or visit the landmarks, it never fails, this town amazes me. The people here have such an effortless sense of style. You could spend an entire

afternoon here just people watching. Of course you do still have the flamboyant and the crazy-talking-to-themselves-people, just little dashes of spice into this melting pot.....Now back to the picnicing.

I bought the coolest, campy-est, picnic basket last year at a yard sale for 10 bucks and have been waiting for a day such as today to break it out. Hmmm... I'm feeling like a camping trip is in order soon.

Oh Yes! Spring has Sprr-rung here in Chi-town! It's time to get outside! Before we move away from this awesome town I'd like to take advantage of the many parks and recreations it has to offer. I'm thinking 'a picnicking we will go!' Cheese, crackers, sandwiches, a little vino...check, check, and check. Now for the side.....

Peachy Slaw

(Make sure to make the night before so it marinates)

You will need:

1 bag of slaw mix (about 6 cups)

1 (6oz) container peach yogurt

1/2 cup mayonnaise

2 Tbls apple cider vineger

2 (8oz) cans of diced peaces, drained (1 cup if using fresh)

1/2 cup pecans, chopped

Mix together yogurt, mayo, and vinegar

Add slaw, peaches, and pecans. Toss together.

Keep in fridge overnight (or for several hours) to marinate.
